The wedding cake is a very ancient tradition symbolising union and allowing guests to share in this happiness. The fruits and grains symbolise fertility. It dates back at least to the Romans, who ate cake made of wheat flour, salt and water while the service was in progress. Tiered and iced confection was introduced to Britain from France after the Restoration of 1660. Originally this was crumbled over the bride's head! Cake was given to the unmarried guests as they left the reception. They would place these slices under their pillows to improve their chances of marrying. Bridesmaids would dream of their future husbands. These days, the cake still forms the central focal point at the reception. The cake-cutting ceremony is traditionally the concluding part of the formalities and follows the toasts, although in some cases it takes place before the speeches and toasts so that it may be taken away and cut by professionals behind the scenes while the speeches take place. The first slice is ceremonially cut by the bride and groom, with the groom's hand covering the bride's. The top tier is usually set aside and kept until the christening of the couple's first child.
